Scalzi’s Weekend Assignment #193: Share one of your favorite comfort foods. Because it’s just about the time of year for them, isn’t it? Getting chillier and with the cold comes the desire for warm food that makes you happy. Hello! Comfort food.
Extra credit: Well, a picture of your favorite comfort food would be nice, and might also make me hungry.
Yeah, it’s Tuesday. So what, it’s gotta be a weekend somewhere in the universe. Can you imagine the little green aliens passed out on red leather sofas after experiencing nightlife? It’s a happening scene. Regardless, to answer this very yummy question here’s the recipe:
INGREDIENTS
- 12 slices bacon
- 1stick of butter (margarine is so bad for you)
- 2/3 cup all-purpose flour
- 7 cups milk
- 4 large baked potatoes
- 4 green onions, chopped
- 1 1/4 cups shredded Cheddar cheese
- 1-2 cups sour cream
- 1 teaspoon salt
- 1 teaspoon ground black pepper
DIRECTIONS
- Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
- In a large soup pot, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
- Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.
If you can’t tell what this recipe is by the ingredients, boy are you missing out. I affectionally call it: Dan Quayle Baked Potatoe Soup.
You can just scoop the baked potato out of the skin after microwaving, it’s easiest. I usually add abit more sour cream and cheese and garnish with the green onion and bacon bits at the end, but the result is wonderful. Its akin to wrapping a warm blanket around you on a very blustery day. Honestly, its one of the easier soups to make as long as you don’t mess up the rue (the whisking) at the beginning.
